Roasted Citrus-Herb Game Hen

This Might have looked a little silly and filled too much on the
top. You Take out the access herbs and such before you eat
it. I try to be a great wife to my husband and provide
yummy meals. I have to say I'm in love with Giada's Home
Cooking on the Food Network channel. With this Game Hen.
You can leave the top off so it can get a yummy crisp
feeling. I forgot to do so, that's why it looks so moist. Yet,
It was so yummy. I encourage all of you to try it at home.
IT'S SO GOOD!!!

ingredients

  • 2 (1 1/2 to 2-pound) Cornish game hens
  • 1/4 cup olive oil
  • 2 shallots, minced
  • 2 tablespoons orange zest, from 2 medium oranges
  • 2 tablespoons lemon zest, from about 3 lemons
  • 2 tablespoons chopped fresh thyme leaves
  • 3 tablespoons chopped fresh mint leaves
  • 1 teaspoon kosher salt, plus extra for seasoning
  • 1 teaspoon freshly ground black pepper, plus extra for seasoning
  • 2 cups low-sodium chicken stock
  • 2 tablespoons Marsala wine or dry sherry
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh orange juice
  • 1/4 cup dried cranberries or currants
  • 2 teaspoons all-purpose flour
  • 2 tablespoons unsalted butter, at room temperature

Directions

Place an oven rack in the lower 1/3 of the oven.

Preheat the oven to 450 degrees F.

Rinse the game hens and pat dry with paper towels. In a small bowl, mix together the olive oil, shallots, orange zest, lemon zest, thyme, mint, 1 teaspoon salt and 1 teaspoon pepper. Rub 2 tablespoons of the zest mixture over the skins of the game hens. Place the remainder of the zest mixture under the skin and into the cavities of the hens. Using kitchen twine, truss the legs together. Place the hens in a shallow 9 by 13-inch baking dish. Add the chicken stock, Marsala wine, lemon juice, orange juice, and cranberries. Roast for 30 to 35 minutes, or until the leg juices run clear. Remove the game hens and set aside. Place the flour in a small saucepan. Whisk in the pan juices. Bring the juices to a boil over medium heat. Reduce the heat and simmer for 8 to 10 minutes until slightly thickened. Whisk in the butter and season, to taste, with salt and pepper.

To serve, remove the kitchen twine and place the hens on 2 serving plates. Drizzle with the citrus-herb sauce.

Cook's Note: Reserve 1/4 cup of the citrus-herb sauce for the Crouton Salad.

1st Ultrasound

Heart beat was something that I would have never thought
would be a reality. I have always been told by so many doctors
that it just couldn't happen to be prepared for the worse.
That I would have many miscarriages.
BEING BLUNT!... For one they said it was because
of my not so normal periods over the years.
That magically cleared up after a few years. They Never
saw that one coming... The other OB said I had
celiac disease and to prepare for the worse with MANY
miscarriages. Then I had one doc say I had all the sign's of
Endometriosis YET she wasn't going to test to see if I have it,
because I haven't been with my husband for over a year.
KIND of ODD if you ask me. If I ever have a hunch on anything,
plus if you're 95% sure that is what it is... Then do a dang test.
I did mention about a Miscarriage I thought I had had. Yet
she said "I can't confirm that because I wasn't seeing you durning
that month". I couldn't go in because we didn't have
health insurance cards to get in, so I couldn't see a doctor then.
Plus that was just NOT normal for me. When I did the research
it sounded just like what I thought it was. I would never
request anyone to go see her at all.

I'm not going to be shy about what has happened in my life.
I feel like some people just stick with that one doctor
and just "deal" with what they are telling you.
No that isn't the case. If I didn't go out and find a
good doctor. I wouldn't have been diagnosed with
Celiac disease and I would have still been getting sick.
I know things happen for a reason as well... I will
repeat. If you are not getting the help that you NEED
find another doctor. I'm not kidding when I say that.
I would know. I've seen enough doctors to know
If they are just all talk, or if they really know what
they are talking about.

I'm VERY open, especially when it comes to health. I don't fell like
people are open to talking about much and it should be just
a hush, hush situation. I don't think that is the case.
I feel like doctors need to be more professional. People
need to be more open about things going on with their health.
TALK people! I know a lot of us can give advice about which
doctors are good. Or which doctors to stay away from.
I sure hope that our health care doesn't turn into canada's health
plan. I would be so lost. I believe we HAVE to have certain doctors
for different things, or we wont get the help we need. I know
mothers with kids with special disabilities wont get the special
help they need for their child. It just makes me sad.
I do believe...
One way or another Doc's need to know what they are talking about
and just act on it. I know when I found out I had Celiac Disease,
it was because I found one AMAZING Doctor. I told him about
everything that had ever happen to me. I don't think if I did
he wouldn't of had the hunch to do the test in the first place.
Sorry about the venting... It needed to be said.

The OBGYN I am seeing now is AMAZING. He actually knows
what he is talking about. I don't feel like I have to go threw so
many other doctors to get an answer.

OKAY now to the good stuff...
I have to mention that the ultra sound was something
that Kenton and I were both so excited about. I feel like
Kenton was like a Kid at Christmas. Just jumping up and down.
He was so filled with excitement. When the doc finally pulled up
the heart beat I was just at awe... I couldn't believe that there
was one. I was speechless! Kenton was so amused at the screen
he didn't say much. The doctor I think was expecting a huge reaction.
I believe I was just in Shock and the only thing I could say was
"Honey it's our baby's heart beat. Can you see the baby?"
He was still staring at the screen and in all smiles.
It was sure a moment I will never forget.

Below is a picture of our babies first picture.
It's amazing on what they can see in just 7 weeks.
Our baby is in the black circle in the middle. Our little
one is off to the right. Kind of like a little caterpillar
in it's cocoon. We couldn't see much. Yet it was still a shocker!

The doctor told us when we heard the heart beat "I'm sorry
but I have some bad news for you". Kenton and I stopped and I said
"What is that". He replied with "I only hear one heart beat, I'm
sorry no twins for you two". LOL! I was happy to hear that there
wasn't twins on the way. I don't think I could handle twins.
He added that it sounded healthy and everything looked
normal. He started to say that he didn't think I was as far
along as I thought I was. He was thinking 6 Weeks and 6 Days.
Then the baby came out from hiding and he measured again.
I was 7 Weeks and 4 days. I was excited to hear that we
will get to see more detail the next time we come in.
Because the baby's head will have formed and the
baby's bone structure will be in place. I have been
so excited learning what is going on with the little one.
I guess I was reading that if it's a boy it's already getting
testostron Yikes! Seems to young to be getting anything
like that.

After our adventure we went to test drive some "Family Cars"
Time to retire from our little Tiburon. It's been a fun car,
yet I'm not about to stick a car seat in that car. Just to get it in,
We have to go threw the hatch and buckle it in, threw the back.
I am not about to do that. Plus only having two doors seems a chore
enough. I know Kenton and I both want a Mazda 3 Hatchback.
Yet Kenton wants all the bells and whistles lol! He is a funny one.

After we caught up with Crystal and we went to Barbacoa. YUMMY!
It's been forever since i've had mexican food. I love that they had
a gluten free menu and that it was gluten free friendly. It is so hard
to eat anywhere. Especially eating out. Call me crazy, but I hate
it sometimes. It was so good to catch up with Crystal to see how
she is doing. Good to see that she was doing better.
I had missed all of those times we used to hang out and
we would get spicy foods. She would tell me I was a baby.
(Because I was, I couldn't even stand mild sauce). Now
I HAVE to have SPICY foods. If not... it's boring and it
doesn't have a taste. I'm so happy she showed me
to the other side of the spicy world. :0)

Nice thing about my pregnancy is I haven't been sick!
No nausea, No throwing up, No feeling completely ill.
The only thing I get is dizziness because I'm hungry for dinner.
I don't have a huge appetite for breakfast, so I drink an ensure.
Second I only get stomach pains when I want to go to sleep.
Other then that I don't really have much going on. OH but
I do get tired one day and the next I'm fine, then Tired the
next. Somedays I feel like I get Nothing accomplished. Blah!
Good thing I have a great husband that Helps out when he can.
I have been so truly blessed to have him in my life.

HONEY you are my everything. I have been so truly blessed
to have you for my husband.

In this video is our ultrasound of our little bundle of joy.
It was so cool to see it on my moms big screen TV.
You could see the hands swimming. It was AMAZING! I think
we watched this video at least 5 times. I loved watching it so close
to get a better look of the little embryo.

To push play on this video, its a little
tricky for some reason you need to move the mouse around to
find how to push play. I need to have Kenton play with this website
so it will be easier to watch videos. Just keep playing with it,
till you see the play symbol light up red. You usually
don't push play where the buttons are, Just a hint.
Or on some computers it works fine with no issues. Just try hitting the
button, if that doesn't work, try the other way that
I explained.
If it doesn't work or if it works... Let me know! Thanks!

I need to Vent!

You are probably wondering why in the world does Daisia
Have picture of chipped wall on her blogspot. I am also glad
my husband allowed me to blog about all of this.

Back a few months ago around in January 2010 sometime.
We had a roommate move in. I was alright with it, though I wanted
rules for this main reason. #1 rule was if you break it you buy it.
Lets just say Majority of the rules went right out the window.
I wont add the other rules on here... just because. I don't
want to disclose those rules that were broken.

First I must add that I have found not just these three chips in
the room from their furniture and who knows what.
There were Exactly 14 chips on the wall, from my knowledge.
Not counting the scuff marks
on odd places and low places and something that might be
chocolate and something else...

Kenton had texted and asked him very nicely if they would
buy some plaster for only three dinks in the wall that we had
spotted. He only texted back "I will talk to my wife about it".

I was so sad to see scuff marks in the hall way, in their room,
and even in the hall way towards the door. I was sad to see a dent
In the ceiling where I had just painted. Now I have have to patch and
repaint it.
Secondly Kenton asked them very nicely if they could clean their
bathroom, before they leave. He didn't Text Kenton back.
May I remind you it has only been lightly
cleaned by them a couple times and deep cleaned by me once.
Since they have lived here. I felt like it was their
bathroom and they needed to keep up with the "up keep".
For being renters and all..
....I did not post pictures of that bathroom, because it was
really gross.....

When they got to the house and gathered the last of their
stuff to move out. I asked if they got Kenton's text and
if they could clean, and I asked if they needed any cleaning
items? He Mentioned it was ok, and they had the stuff to clean
the bathroom, and that he got his text message.

Right before they walked out. our roommate placed
her key on the counter and said good bye I asked if they cleaned?
She replied with No and she had excuse after another excuse.
One excuse was she didn't have cleaning supplies. Then
she mentioned that Jon had cleaned the bathroom
two days ago. (which was just taking out the trash, from the bathroom)
I mentioned again we had cleaning supplies for them.
Second excuse was that she didn't have "her" vacuum. I replied with
"I have a vacuum you can use". She said she would come back and
clean it. Then never again came back, nor did she or husband ever respond to
Kenton's text messages the next day after.

So frustrating! I need to mention that the tub was black
and looked like it hadn't been clean this whole time they
have been living here. I then come to find the carpet is soiled
and there was candle wax on the carpet.
The picture Below is Dirt from them leaving the window open
all the time. This was all around the trim in this room.
So gross. I was so sad to see that they couldn't even vacuum it
up. I felt so disrespected and so hurt all at the same time.

I have no Idea what we did to these two, but it all came down
to, a dirty room with dents and dirt with filth.
That we have to now clean and fix up. I don't know how
"he" could have cleaned the bathroom already. The sink looks like
It hadn't been cleaned with spots and crap
in the sink and around it, on top of the toilet was nothing
but dirt and dust. The tub was a mess. I didn't want
to post those pictures, even though I had them. As
I mentioned above.

IN the long run... I have just decided I think it's going to
be a long time before I get the guts to EVER rent my
house out again. My friend had mentioned that it could
of been worse, for he has had to deal with it before.
He was in more of a mess then we are.
If we do ever have renters. There will be a deposit, for if this
kind of stuff if it ever comes around.
If you are wondering why I have an open vent on my blog.
It is a reminder on how many times I had caught this
open while their window was wide open. So sad to see
that every time we asked if the vent was closed. They
responded with "yes". When It was obviously open.
I don't like it when people lie straight to my face. Makes
me sad. Especially when I Know the true answer.
Sorry this is long. I just have been so sad and hurt over all
of this. I know another story that happened was with
our roommates in the kitchen. That seemed to occur every night.
How old are we children? How many times
do I have to say "Please clean up your dishes". I believe this
was an everyday text to these guys.

Secondly you all know I have Celiac Disease.
Have you ever heard of Cross contamination?
I have gotten sick countless times because of the
counters of my own house. I stopped eating so much
in my own kitchen. The smallest things would get me sick.
Say for instance they would make a sandwich earlier in the day.
They don't wipe down the counter and I would place
my food on the counter while making my own food, later
in the day. I would be so sick,
then come to find out, that I remembered that they
were making sandwiches earlier in the day. I would
be so sick by the end of the day.

Kenton and I would clean up dishes and wipe down
their pizza mess. Mention it was their and then
having them look at us like they had no idea what
they were talking about. I had brought this
up to their attention. I was kind of tired of the
attitude of them acting like they didn't know
what we were talking about. I finally had
to tell our roommates about how serious my
condition is. It is so bad I have Kenton
wash his face and brush his teeth after
eating gluten. Because I get sick if he kisses me,
and he didn't wash up. I was very nice
bringing it across to our roommates attention about
keeping things clean and knowing how serious my condition was.
He then went up the stairs and slammed the door. I was shacking
so badly that I started to cry and was wondering
why they just don't get it.

We would usually ask them to use the clorox wipes on
the counters. Yet that was a very hard task for them
to do....I have to mention that we are not a hotel.
We sure felt like we were running one though.
From buying extra dishwasher soap, garbage bags,
extra paper towel etc.

Someone mentioned
When I asked them "what should I do with all of this?"
He mentioned these two love birds were getting us
ready for kids. I do believe that if it is your own kids
it is a little different from renters. Even step kids
are treated with the same respect as your own kids.
I even know that when I was a nanny, I treated
them as my own kids, and I treated their house
as if it were my own house.
This is just different. Renters should be respectful.
I believe we've only had one decent renter.
He went over and beyond. Maybe we
should only rent to business men that
are also very clean from now on. (This goes for that
cute/sweet Andelyn who rented from us as well).

Treat our house with Love and Respect!
I promise you it will do the same from you
in return. Our house is a home, welcome
to friends and family. We plan to have many parties.
Filled with Love! I look forward to the day
when we can fill this house with more laughter,
sunshine, and lots of good memories...
With the people we love.

1st Month in a half

Can you see the glow on my face? I can! :0)
It is so weird still to know that I'm pregnant. There
are good days and there are bad days. The best
time is knowing there is a little one on it's way.
The other part that isn't so good is the side affects.
From feeling nauseous, dizzy, certain foods make me
feel like I'm going to throw up. They are over powering
sometimes to the point where I have to walk out of the room.
I have felt Not hungry to super hungry and my slight cravings
begin. It isn't that bad yet... besides the dizziness and nauseous that
I feel at some points. I do wonder why in the world should you
get to feel so bloated so early?
"Tenderness, Tenderness, Tenderness"...
is all I can say, without saying so much. lol!

I get to show a non bump! It's great to know there
is something going on in my belly.
I did some research. Some people have been
asking "How far along are you?" Today I'm
6 weeks and 4 days. 1st Trimester will end October 7th 2010.
I'm super excited. I hear I get to find out the babies sex on
October 7th. Kenton's Birthday is October 10th <
Happy Birthday present for Kenton. :0)
Second Trimester will end January 20, 2011.
I have 33 weeks and 3 days left to go.

I'm excited because I get to see my doctor on
Sept 7th 2010. It will be the first time I go in.
My doctor is Dr. Jed Naisbitt M.D.
Yes He is an M.D. I'm excited because he is going to do an
Ultrasound in 4D! Yes 4D... It's so exciting! When I told my
Mom that... She said "Do you get to smell the baby too?" No
Mom I wont be able to smell the baby, but I will share the
pictures with you guys for sure.

Well I'm starting to get sick and feel dizzy again. I should
probably get off the computer. I will keep you all update.
LOVES!

Kenton's group office Party

Here they are playing Tug-A-War. Can you see my hubby
in the green? He is amazing! They placed him right in the
front of all the action. Funny thing is most of them were
wearing cleats. lol! Shh! Don't tell. They said the Cleats
didn't really help that much. It did give them support for
their feet lol jk!
Team O.M.G. W.T.F. Which stands for
"OM Guys, Wow They're Furious" This is the
computer support team. They all work together. Only
one of them works in the security office. The second one
from the left.
After they won, they are showing that they are NUMBER ONE!
They looked like they were having so much fun out there.
Besides the rope burns majority of them got on their arms.

After the game we enjoyed visiting with Kenton's co-workers.
They were all congratulating us on me being pregnant. I guess
they all have a bet to see if it's a girl or a boy. Kenton mentioned
that no matter what if its a girl or a boy. I still get free food.
Because as Lisa would say "I'm having the baby, and I have to feed
for two now". They also said if it's twins we get to just keep the money
for the babies. lol! I hope it's not twins. I don't know what I would do
with myself. I feel like women who have twins and can make it
are my hero's.
This is our puppy Reilly. I bought him a cute shirt that says
"All Star" With a star on the back, because he is an all star.
He seems to love his shirt. After I give him a bath and I have
his shirt washed, he is almost excited to have his shirt back on.
He loves it! Reilly has been so good this last little while.
We are still trying to train him, I'm getting used to the fact that
he is still a puppy. I wasn't raised with a puppy. I'm not used to the
biting. Him chewing on anything he can get ahold of.

Good thing about Reilly is that he LOVES baths, just like Kassey.
Silly cat!!! Reilly has learned how to dance on his back legs
while standing. Reilly has also learned how to sit, stay, and come.
The cutest thing about our puppy is when I lay him on his back,
on his bed and place his blanket on top. He is so peaceful.
I love it when he plays on his back and looks so cute.
I love our puppy. Hopefully he will be great with our
baby and not be jealous. He is great with my nieces.
That's a good things right?

I'M PREGNANT!!!

Kenton and I have been ready to have kids since
we got married. Probably because we had a 7
month engagement. All Because I wanted a spring wedding!
After that long wait. We
decided to try, try and tried again.
After 4 Months. BOOM a baby popped.
We are so thrilled and excited for this new chapter
to begin in our life.

Our baby's due Date is April 21, 2011
I haven't seen a doctor yet...
but from our app that we down loaded on our iPhone
calculated and did the math. I love technology!
I think it is funny because April 10th
is When we got married. I guess we will be
sharing that month with our baby as well.
What a great 1st year anniversary present.

We have picked a name out if it is a girl "MaKenna Lynne"
I have always wanted a little girl named
MaKenna since I was in high school.
We wanted Lynne to take after her mother (me)
of course. We have picked out "Kayden" for a boy.
I always wanted Hayden, but since Kenton Knew a Hayden
in school and didn't like him much, we decided to stay away
from that name. Kenton always Wanted a son that was
kind of named after him, and he has always been fond
of the name Kayden. Never knew... So we might just stick with
those names for now. We don't have a middle name for the
boy yet. I don't even know if these names will stick.
Kenton and I did mention a middle name for Kayden,
wish is "Reilly". I'm kind of scared that the kid
will get teased because we named the dog Reilly,
before I even knew that I could get prego.
The poor kid will get teased, because they will
all think that he got his middle name off of his parents
first dog. Sadness!

I thought the day I found out was a very good day.
I went to the store bought shrimp and a pregnancy
stick. Then when I came home I took the test.
Gave Reilly a bath and then came back and looked and saw
that it was positive. Came down stairs smelled the Steak
Kenton was making for him and his co-works for lunch.
Then lost my apatite for anything. Nothing sounded good, nor
did the steak help. I was so sick! I didn't talk much when Kenton's
co-workers finally came over. I wasn't trying
to be rude and then just leave. I was wanting too though.
I was tired and wanted to go and rest.

By the time Kenton and his co-workers left I ran to
the store bought a cute pregnancy shirt that says
"Baby makes the belly go round". I asked Kenton to
come home a little early. He said yes! I rushed back home.
Put together a few signs. Wrote him a little note on the
garage door that said "Honey come upstairs, I have a
surprise for you". He came up and I slammed the door and
I ran to sit on the bed. I had my hands behind my back.
As he was looking at me funny and was wondering
what I had behind my back. I soon held up this
cute sign that said "I'm pregnant!" with the
Pregnancy stick. He attacked me with hugs and kisses.

Kenton was overjoyed with excitement!
I love him so much. Kenton is my rock and my
shied and now going to be the father of my
children. What more can a lady ask for?
We can't wait for our little bundle of Joy to
be a part of our little family.

We love you all!!!

JetBlue

Hey Everyone! I thought I would update all of you what is
going on with this job. I just got a call today, saying
that my 10 year background check has FINALLY
cleared. She let me know that training starts on
October 12th 2010

I have been filling out paper work since I believe as early
as February. You would think I would be happy that I
finally got the job. Well the only down fall is that
Kenton and I have planned to go to Mexico on
October 31st. Everything is already payed for.
Kenton's parents are also going with us. Seeing that
it was their idea and all. So they have everything payed
for as well on their side.

I would hate to bail out on them. Seeing that
We couldn't go on our honeymoon trip. Kenton
and I couldn't go on our disneyland trip. Due to
Kenton's new job and we couldn't get the time off
for it. So Kenton's parents went on our Honeymoon
trip and got to enjoy the stay, and decided to take over and pay for it.
Kenton and I would have gone, if we actually could
have gotten the time off.

Where the down fall really comes in on Jetblue Job, is
that the training is one whole month.
I can't miss one day during training, or
I could get fired. I can't really cancel our trip either.
Everything has been already planned and payed for. I feel like
I deserve this trip. Seeing that I didn't get a honeymoon trip
at all. I feel a little frustrated and overwhelmed yet again.

I wish something would go right. Maybe this is a SIGN, that I
just haven't been listening too for the past 5 months.
You would think I would have already had the job,
but NO! They have to wait until I'm going to be gone
to MEXICO!!!

People always say that I "give up to easily".
Seeing that I had no other choice when I was SICKER then
a dog durning that time and I had to FORCE myself and just give up.
I lost many job because I felt like I was on my death bed. Now that I'm
feeling 95% better. I don't have a job and I really have any reason
to be home. It just reminds me of my sick days of
of the past being home
24/7.

I will try to call in a little bit and see if they can "Magically"
Hold the job.(Yet again) I doubt it! They have been nice enough to wait this
long for that dang background check to clear. Yet I doubt
the lady that works at Jetblue will answer her phone.
(She never does). I will probably hear from her 1 1/2 months later.
That tends to be the routine her and I have. I call her right away
and she gets back with me in a month in a half later.

Any Idea's on what I should do??? I can't cancel my Trip.
Nor do I want to get rid of that Job.
Wish that lady would just answer the phone,
so we can talk and figure out a game plan.
